Very helpful in machine kneaded bread. Helps the gluten stretch without tearing. Improves rise and texture. Use about 3 T. per 5-6 loaf batch. One package needed per 50 lbs wheat. Ingredients: whey, lecithin, soy powder, citric acid, dry yeast, sea salt, corn starch, ascorbic acid, honey. NO MSG, NON GMO.
